Hi!
I know a lot about growing mold, but not about preventing
it. I do know a student who tried growing mold on bread
with and without preservatives. Her results were rather
interesting. The bread without preservatives took the
longest for mold to grow. I would have expected just
the opposite, wouldn't you?
One recommendation that I can make would be to look
carefully at bread packages for preservatives and then
maybe visit a bakery and ask them. Of course there
are cleansers that prevent mold (but I wouldn't want
to eat those).
Your question is a really good one, it has me thinking
about it. If I come across anything else, I'll be sure
to let you know.
I looked on the Internet and found an incredible site
that has a couple of pictures of bread mold taken
with a scanning electron microscope.
